1 package of thin spaghetti
1/2 c. vegetable oil
1 large can of Rotel
1 package of fresh mushrooms, washed and quartered
1 onion, chopped
2 t. cumin
1 t. minced garlic
36 ounces of chicken broth
Heat oil in stock pot on medium high for 3-4 minutes.
Break pasta into thirds or quarters into hot oil.
Brown pasta for a a few minutes. It doesn't all have to be brown.
Stir in rest of ingredients and cook until pasta is al dente.

BBQ Green Beans
4 cans of green beans, drained
1 1/2 cups sweet BBQ sauce
1 onion, chopped
1 t. minced garlic
Dump everything in a crock pot. Mix well. Cook on low for 4 hours with spoon propped under lid to let the steam out.

Hominy Casserole
3 cans of hominy, drained
2 small cans of green chiles, chopped
1 8 oz package of cheddar cheese, shredded
1 package smoked sausage, chopped
Dump everything in a crock pot and mix. Cook on low for 4 hours. Stir periodically and prop spoon under lid so steam is released.
Can also bake in 350 degree oven for 35 minutes.
